JUST WONDERFUL LEMON-GARLIC PORK LOIN ROAST

1 Each Pork Loin Roast Preferably in a Sealed Bag
2/3 Cup Lemon Juice
1/2 Cup Olive Oil
1 Jar 4 1/2 Ounce Jar Garlic, Chopped
2 Tbsps Dried Parsley

1. In a small bowl, combine lemon juice, olive oil, garlic and parsley.

2. Place pork roast in a 1 gallon, self sealing plastic bag; pour marinade over roast, seal bag.

3. Marinate 6-8 hours or overnight. I do it over night and flip it occasionally.

4. Remove roast and discard marinade.

5. I place roast on the rotisserie over the pre heated barbecue and cook for approximately 45 minutes.

6. I then wrap roast in heavy duty foil for about 1/2 hour standing (and continues to cook so don't leave on grill too long) and then slice about 1/2 inch slices.

Tips
My roast is usually too long for the marinade bag so I slice off excess and freeze for later use as pork chops.
