ORANGE BEER CAN CHICKEN

1 Each Whole Chicken (about 4 pounds), washed, dried and giblets removed.
2 Tsps Olive Oil
1 Can Beer (Discard or drink 1/2 beer) Remove entire top of can.
4 Each Large Garlic Cloves, Whole..no need to even peel.
1 Each Large Orange, Cut in Half. Peel and section 1/2 only.
1 Mixture Salt, Garlic Powder, Parsley, Garlic Pepper and Lemon Pepper.

1. Preheat Oven to 325°F.

2. Mix spices in a bowl.

3. Rub chicken with olive oil. Rub spices inside and out. I wait until chicken is on beer can before applying spices to the outside.

4. Discard 1/2 of beer and place garlic cloves inside beer can.

5. Place chicken over top of beer can by holding chicken up and pressing can into cavity. Place 1/2 peeled orange wedges inside skin at top of chicken.

6. Place in pan in oven for 45 minutes, then rotate 180° and cook for another 45 minutes, then rotate again 180° and cook for another 15 minutes. Remove pan from oven and squeeze remaining orange over chicken. Cover tightly with foil at let stand for at least 30 minutes.

7. Remove from beer can and carve chicken and serve.

You can buy beer can holders at your local grocery store.

I serve with a green salad and baked red potatoes.
